A variety of food is available in India, owing to the vast cultural diversity and region.  We will take a tour of the best dishes with pictures and pronunciations.  



TEA  known as CHAI 




Tea stall can be found in almost every part of India. Tea in India is boiled with a lot of milk and sugar. It is called KADAK CHAI. It will be served in a glass / cup saucer/ plastic cups / earthen clay glasses known as kulhar (pronu: kulhadh).





SAMOSA (POTATO FILLED PATTICE)


Made with white flour and filled with potatoes mixed with light Indian herbs.  It is then deep fried. High in calories but very tasty. Please do not eat green chutney served with it as it may be spicy.

A light yellow or black pulse tempered with little oil and cumin seeds will be served with a bowl of plain rice or cumin tempered rice (jeera rice). Great dish with less of oil and chillies

BREAD known as ROTI / CHAPATI /  NAAN / PARATHA / ROOMALI ROTI

Bread is easily available, which can be white bread, brown bread, sweet bread, multi grain bread, pita bread, honey bread etc.




Indians prefer ROTI / CHAPATI over bread. These are made from whole wheat flour.  Some other grains used for making these chapati’s is

Jowar - Sorghum (English)/ Milo. equivalent to:

Great millet and Guinea corn (West Africa), Kafir corn (South Africa), Dura (Sudan), Mtama (Eastern Africa), Jowar (India), Kaoliang (China), Bachanta (Ethiopia) & etc 


Bajra -  is equivalent to Pearl millet (English).

Bajra (Pennisetum glaucum (L.) R. Br./ Pennisetum americanum (L.) Leeke) equivalent to: 

Bulrush millet, Dukn (the Sudan), Bajra (India), Babala (Natal) & etc

Makai -  is equivalent to corn flour

RICE PANCAKE known as DOSA

(Not Spicy)




Must eat. Traditionally comes from south India but can be found everywhere.  Made out of Rice and Pulse. Ground and fermented. Spread out like a pancake with little oil it is roasted and served with potatoes, yellow pulse (known as sambhar) and little tamarind and vegetables, coconut chutney.  Its NOT spicy and very crispy.

(Not spicy)



MUST eat. Steamed rice flour cupcakes shaped like a UFO J  served with yellow pulse (known as sambhar) and little tamarind and vegetables, coconut chutney.



NON VEGETERIAN

Can be broadly divided into chicken / mutton / sea food



TANDOORI CHICKEN known as TANDOORI MURG

(SPICY)



Grilled in coal griller called (tandoor). Spices and red food colour added while marinating. Served with onion rings.

CHICKEN TIKKA

(SPICY)


Boneless chunks of chicken grilled in coal griller called (tandoor). Spices and red food colour added while marinating. Served with onion rings.

MUTTON SEEKH KABAB

(MEDIUM SPICY)


Generally beef mince skewered in shape of a sausage grilled over charcoal pit.  Served with onion rings. Best eaten with roomali roti (See roti section)
